Ingredients:

  • 5 potatoes, diced
  • 2 carrots, sliced
  • 1 yellow onion, chopped
  • 3-4 garlic cloves, diced
  • 32 oz container beef stock
  • 15 oz can diced tomatoes
  • French onion soup packet
  • Stew beef
  • 1 tbsp garlic salt
  • 1/4 cup flour
  • 1 tbsp olive oil

Instructions:

In a plastic bag, coat stew meat with flour. In a soup pot, warm olive oil then add in garlic, onion, and meat. Cook until onions are translucent and beef is slightly browned. Add in beef stock, potatoes, carrots, tomatoes with juice, French onion soup packet, and garlic salt. Bring to a boil, then lower and let simmer for 20-25 minutes, until potatoes are softened. Serve with a side of crusty bread. Enjoy!
