Foodie Favorite: Air Fryer Coconut Shrimp

A meal made quick and easy

A fourth generation Kenosha native, Freeborn is fueled by a desire to build community through her culinary skills in the kitchen. The Tremper High School graduate loves trying new recipes as well as creating unique ones of her own.

INGREDIENTS:

  • 9 oz raw shrimp, shells removed
  • 1 cup flour
  • 1/2 cup shredded coconut
  • 1 tsp Old Bay seasoning
  • 1 tsp baking powder
  • 1 egg
  • 1/2 cup coconut milk

INSTRUCTIONS:

Whisk together egg and coconut milk. In a separate bowl, mix the flour, coconut, Old Bay and baking powder. Dip shrimp in milk mixture, then coat with flour mix. Lightly spray air fryer, then add shrimp and lightly spray again. Cook at 400 degrees for four minutes or until crisp. Be careful not to overcook or shrimp will be dry.

Serve with veggies of choice. Recipe makes one serving. Enjoy!
